Looking for a delicious plant-based post-hike meal? Check out the Mind Blown Dusted Scallops from The Plant Based Co! We are in love!
Before we get to the deliciousness, here's a bit about The Plant Based Co. Their story is pretty inspiring and one of the reasons we are so obsessed! They are a company we are proud to support. The female ran family company started 20 years ago on Gwynn's Island, VA, a tiny little island in the beautiful Chesapeake Bay, selling actual seafood products. After witnessing the "unacceptable and sometimes hidden practices in the seafood industry,” they decided to offer plant-based alternatives in "hopes to spur meaningful change and be part of the solution for the future." They saw the future, and with overfishing and a population increase of seafood eaters, they knew drastic action was needed to restore our oceans to abundance.
Their mission is to create healthy and delicious seafood products so close to the real thing they will blow your mind! And these scallops are seriously on point! They taste like the real thing without the overfishing, damage to the ecosystem, and ocean pollution in the form of discarded fishing nets. Made from vegetable root starches, pea and algae proteins, and seasonings, they are a huge win for anyone who has a shellfish allergy and misses seafood (no shellfish at all in these buttons of love). They are also soy-free and gluten-free!
The scallops are easy to make and so tasty, which makes them a perfect post-hike dinner option. We seared them in a skillet with some Miyoko's Butter, topped with Vegan Rhino's beurre blanc sauce and served them with roasted garlic potatoes, grilled asparagus, and a crusty baguette. We paired the 2021 Monte Luna, an 100% estate-grown saignee-style Montepulciano from our favorite local winery, Monserate Winery.
This meal was heavenly!! 10/10 recommend!
