Ingredients
- 1 Box Mind Blown Crab Cakes (2 cakes)
- 1/4 onion, diced
- 2 garlic cloves, minced
- 2 Tbsp. orange juice
- 1 Tbsp. lemon juice
- 4 tbsp plant based butter of choice
- 1/2 C vegetable broth
- 1/4 plant based cream
- 1/2 C hummus of choice
- 1/2 C cherry tomatoes
- Salt and black pepper
- Fresh basil and/or parsley and olive oil to finish
- Cooking spray
Directions:
1) Prepare the Mind Blown Crab Cakes from frozen:
*Stovetop: In a large skillet, heat high-heat oil. Once heated cook Mind Blown Crab Cakes 2-3 minute each side. Remove from skillet and reserve on a plate.
*Air Fryer: Spray the air fryer basket with high-heat oil. Add Mind Blown Crab Cakes; coat with cooking spray. Turn air fryer on at 370 degrees for 10-12 minutes until golden brown; reserve on a plate.
TIP: We like to crisp them up in the air-fryer first, then finish on the stovetop for this recipe we did 10 minutes in the air-fryer.
2) In a non-stick skillet sauce pan, heat the 4 tbsp plant based butter of choice until melted; 1-2 minutes.
3) Add the lemon juice, and orange juice, and plant based cream into the pan; bring it to a boil whisking the sauce until it starts to reduce.
4) Place both prepared Mind Blown in to skillet, spooning the thickened sauce over the top of each cake occasionally to soak up the butter citrus sauce; 3-5 minutes.
5) Assemble: add serving of hummus to a plate, top with prepared crab cakes, top with cherry tomatoes, herbs, and olive oil. Enjoy!
