INGREDIENTS
8-10 Mind Blown Coconut Shrimp
Tortillas of choice
1 Large mango, cubed
1 jalapeno, sliced
1 large avocado, sliced
1 bundle of cilantro
1 lime, cut into wedges
1 Tbl. coconut oil for cooking
Plant Based Lime Crema for Tacos:
½ cup plain plant based yogurt, we used coconut based yogurt
3 tablespoons plant based mayonnaise
1 tablespoon lime juice + zest of the lime juice
Salt to taste
DIRECTIONS:
1) Prepare the Mind Blown Coconut Shrimp. In a large skillet heat high-heat oil. Once heated cook Mind Blown Coconut Shrimp 1 minute each side; set aside. Remove from skillet and reserve on a plate.
*Air Fryer: Spray the air fryer basket with avocado oil. Add Mind Blown Coconut Shrimp. Turn air fryer on at 360 degrees for 10-12 minutes.
2) Heat the tortillas up, and prepare the plant based Lime Crema by mixing all ingredients in a bowl; set aside.
3)Assemble your tacos. First a layer of the prepared Plant Based Lime Crema, sliced avocado, Mind Blown Coconut Shrimp, jalapeno, mango chuncks, then finish with cilantro and lime juice. Enjoy!
