Ingredients:
(Makes 8 Lettuce Cups)
2-3 prepared plant-based Mind Blown™ Crab Cakes
1/4 teaspoon Old Bay (or to taste)
2 teaspoons lemon juice
¼ C celery, diced
¼ C red onion, diced
1/3 C plant-based mayonnaise of choice
About 8 Bib Lettuce baby leaves
Garnish with green onion and more Old Bay seasoning and lemon wedges
Instructions:
1. Place prepared Mind Blown™ Crab Cakes in a mixing bowl; mash with a fork until you get desired ‘lump crab’ texture.
2. In the same mixing bowl with the ‘crab’ mixture, add Old Bay seasoning, lemon juice, diced celery, diced red onion, mayonnaise of choice; fold together until combined evenly.
3. Lay out the bib lettuce leaves and scoop the mixture into the middle of each lettuce cup.
4. Garnish more Old Bay seasoning, diced green onion, and lemon wedges.
