1 pound Mind Blown Dusted Scallops
8-12 tortillas of choice
1 15oz can refried beans
1 ear of corn, charred and sliced off the cob
1 avocado sliced
Fresh cilantro, chopped (optional)
Coconut oil for frying
Red pepper flakes
1) Prepare the Mind Blown Dusted Scallops. In a large skillet heat high-heat oil. Once heated cook Mind Blown Dusted Scallops 1 minute each side; set aside. Remove from skillet and reserve on a plate.
*Air Fryer: Spray the air fryer basket with avocado oil. Add scallops. Turn air fryer on at 360 degrees for 10 minutes.Set the oven to broil.
2)While the scallops are cooking, prepare the tortillas; heat coconut oil in a skillet. Add the tortillas and cook few minutes on each side. You want them lightly browned and beginning to crisp. Let them rest on a paper towel to rest.
3)Start to build your tostadas. Layer black beans, corn, then the cooked Mind Blown Dusted Scallops.
4)Top with mashed avocado, cilantro, fresh lime, and red pepper flakes.
