Mind Blown Shrimp Scampi

  • 1 pound Mind Blown Plain Shrimp
  • 4 tablespoons extra virgin olive oil , divided
  • 4 cloves garlic, minced
  • 1 teaspoon pink salt
  • 1/2 teaspoon red pepper flakes
  • 4 tablespoons butter
  • 1/4 C white wine, optional
  • 2 tablespoons fresh lemon juice
  • 2 tablespoon minced parsley
  • extra lemon wedges 
  • Plant based Parmesan cheese
  • bread for dipping

DIRECTIONS:

  1. Set Mind Blown Shrimp out in a mixing bowl to thaw for 10-15 minutes. Toss with garlic, 2 Tbsp. olive oil, pink salt, and red pepper flakes.
  2. In a large skillet, warm 2 tablespoons butter and remaining 2 Tbsp. of olive oil over medium heat. Add the Mind Blown Shrimp garlic mixture to the skillet. Cook for 4-5 minutes, tossing frequently until the Mind Blown Shrimp are cooked through.
  3. Stir in the white wine (if using) and lemon juice. Cook for 5 minutes or until the sauce thickens and reduces by half, stirring occasionally.
  4. Sprinkle with the minced parsley, red pepper flakes and plant-based parmesan. Serve warm toasted bread for dipping and extra lemon wedges.
