1 lb. Mind Blown Dusted Scallops
Cucumbers, sliced
Radish, sliced
Snap peas, chopped
Dill, for garnish (optional)
1 Tbl. Olive Oil for finishing
Lemon wedges for garnish (optional)
Vegan Harissa Yogurt Sauce
5 ounces plain, dairy-free/vegan yogurt of choice
2 tablespoons harissa paste
1 tsp. Lemon juice
Pink salt fresh ground pepper to taste
1) Prepare the Mind Blown Dusted Scallops. In a large skillet heat high-heat oil. Once heated cook Mind Blown Dusted Scallops 1 minute each side; set aside. Remove from skillet and reserve on a plate.
*Air Fryer: Spray the air fryer basket with avocado oil. Add scallops. Turn air fryer on at 360 degrees for 10 minutes.Set the oven to broil.
2)While the scallops are cooking, prepare the veggies and Vegan Harissa Yogurt. In a mixing bowl, whisk together all Vegan Harissa Yogurt Sauce ingredients and spread in a serving bowl.
3)Top the Vegan Harissa Yogurt Sauce with cooked scallops, fresh veggies, dill, lemon wedges, and finish with drizzle of olive oil.
4)Serve with mini toasts for an appetizer, or serve as a main dish! Enjoy.
