INGREDIENTS:
4 Mind Blown Dusted Shrimp, prepared
1 Cup Sushi rice, or white rice
1 large seaweed sheet
Cucumber sticks
Bundle of fresh spinach
Soy sauce or coconut aminos for dipping
Vegan Avocado Sriracha Mayo
1/2 avocado, mashed
2 Tbsp. of vegan mayo of choice
1 tsp. Sriracha
1-2 tsp. fresh lime juice
DIRECTIONS:
Prepare the Mind Blown Dusted Shrimp according to the package.
Place the seaweed on a bamboo mat, then cover the sheet of seaweed with an even layer of prepared sushi rice. Smooth gently with the rice paddle.
Spread a layer of the Vegan Avocado Sriracha Mayo on top, then layer with cucumber sticks, bundle of fresh spinach, prepared Mind Blown Dusted Shrimp and roll it up tightly. Slice with a sharp knife, and enjoy with soy sauce or coconut aminos.
