Pesto Pappardelle with Scallops

 

Ingredients:

1 Cup Mind Blown! Plant Based Dusted Bay Scallops

1 package of Pappardelle pasta

Pink salt and pepper to taste

½ Cup pesto

Parmesan and red pepper flakes

 

Directions:

Heat coconut oil in a cast-iron skillet. Once heated cook Mind Blown! Plant Based Dusted Bay Scallops 1 minute each side; set aside.

Cook pasta according to package. Once cooked reserve some pasta water, and strain.

Add pasta back into the warm pot you cooked the pasta in with the seared scallops, pesto and 1-2 Tbl. of pasta water. Mix to combine.

Top with parmesan and red pepper flakes. Enjoy!
