Mind Blown Dusted Scallop & Pesto Pappardelle

Ingredients:

1 Box Mind Blown Dusted Scallops

1 package of Pappardelle pasta

Pink salt and pepper to taste

½ Cup pesto

Plant-based parmesan and red pepper flakes

 

Directions:

Prepare the Mind Blown Dusted Scallops either on the stove-top or air fryer. *Cook from frozen*

  • *Air Fryer instructions: Spray the air fryer basket with high-heat oil spray.  Add Mind Blown Dusted Scallops.  Turn air fryer on at 360 degrees for 10 minutes.

    *Stove-top instructions: Heat high-heat oil in a cast-iron skillet and cook Mind Blown Dusted Scallops for a about a minute on both sides until golden brown; set aside.

Cook pasta according to package. Once cooked reserve some pasta water, and strain.

Add pasta back into the warm pot you cooked the pasta in with the cooked Mind Blown Dusted Scallops, pesto and 1-2 Tbl. of pasta water. Mix to combine.

Top with plant-based parmesan and red pepper flakes. Enjoy!
