Mind Blown Shrimp Ceviche

Plain Plant-Based ‘Shrimp’ Ceviche



  • 1 pound Mind Blown Plain Shrimp
  • ½ cup cherry tomatoes, sliced in half
  • ¼ red onion, chopped
  • 1 Jalapeño, chopped
  • ¼ cup cilantro, rough-chopped
  • 2 limes, juiced
  • pink salt to taste


  • Let the Mind Blown Plain Shrimp thaw from frozen. Chop into bite size pieces.
  •  Place Shrimp and remaining ingredients in a bowl and toss to combine.


  • Serve in individual cups with a side of tortilla chips.
