Plain Plant-Based ‘Shrimp’ Ceviche
- 1 pound Mind Blown Plain Shrimp
- ½ cup cherry tomatoes, sliced in half
- ¼ red onion, chopped
- 1 Jalapeño, chopped
- ¼ cup cilantro, rough-chopped
- 2 limes, juiced
- pink salt to taste
- Let the Mind Blown Plain Shrimp thaw from frozen. Chop into bite size pieces.
- Place Shrimp and remaining ingredients in a bowl and toss to combine.
- Serve in individual cups with a side of tortilla chips.
