Spooky Mind Blown Dusted Scallop Fettuccine Pasta

INGREDIENTS:

1 Box of Mind Blown Dusted Scallops

1 package of forbidden rice pasta 

2 Tbps. of plant based butter

2 cloves garlic, minced

1/2 tsp of red pepper flakes

1 Tbsp. of lemon juice

1/4 C white wine, or vegetable broth

1 Tbsp. tomato paste

1/2 C cherry tomatoes, sliced in half

1/4 C parsley, chopped

DIRECTIONS:

1) Prepare the Mind Blown Dusted Scallops from frozen. In a large skillet heat high-heat oil. Once heated cook Mind Blown Dusted Scallops 1 minute each side; set aside. Remove from skillet and reserve on a plate.

*Air Fryer: Spray the air fryer basket with cooking oil of choice. Add Mind Blown Dusted Scallops, turn air fryer on at 360 degrees for 10-12 minutes.

2) In a large pot, boil your forbidden rice pasta until al dente.

3) Heat a non-stick skillet to high heat. Add 2 tablespoons of plant based butter; once melted add the garlic, then red pepper flakes and saute for one minute. Add lemon juice, wine or broth, and tomato pasta, and bring to a simmer.

4) Add in prepared pasta, prepared Mind Blown Dusted Scallops and toss to combine. Top with cherry tomatoes and parsley. serve and enjoy!
