Mind Blown Shrimp Green Curry

INGREDIENTS

  • 1 pound Mind Blown Plain Shrimp
  • 1 Japanese sweet potato, peeled and cubed
  • 2 tablespoons Green Curry Paste ( we used Thai Kitchen found in the Asian section of most grocery stores)
  • 1 15oz can coconut milk
  •  3 Cups vegetable broth
  • 1 Cup broccoli florets
  • 1/2 cup Red bell peppers
  • 1/2 Red onion, thinly sliced

Optional Extras:

  • chopped fresh cilantro
  • handful of basil
  • limes

DIRECTIONS

In a deep pot, quick sauce the sweet potatoes, red bell peppers, and onion in coconut oil; 2-3 minutes.

Add the curry paste pot with coconut milk and broth. Simmer for 5-10 minutes until potatoes are fork-tender.

Add broccoli and Mind Blown Plain Shrimp ( from frozen is fine). Simmer for 5 minutes until broccoli is bright green and Shrimp are cooked through.

Finish with basil, cilantro, lime and jalapeño if desired.
