- 1 Box Mind Blown Dusted Shrimp
- 1 Japanese sweet potato, peeled and cubed
- 2 tablespoons Green Curry Paste ( we used Thai Kitchen found in the Asian section of most grocery stores)
- 1 15oz can coconut milk
- 3 Cups vegetable broth
- 1 Cup broccoli florets
- 1/2 cup Red bell peppers
- 1/2 Red onion, thinly sliced
- chopped fresh cilantro
- handful of basil
In a deep pot, quick sauce the sweet potatoes, red bell peppers, and onion in coconut oil; 2-3 minutes.
Add the curry paste pot with coconut milk and broth. Simmer for 5-10 minutes until potatoes are fork-tender.
Add broccoli and Mind Blown Dusted Shrimp ( from frozen is fine). Simmer for 5 minutes until broccoli is bright green and Shrimp are cooked through.
Finish with basil, cilantro, lime and jalapeño if desired.
