1 C of Mind Blown Plain Shrimp
2 Tbsp. vegan plain yogurt
1 Tbsp. vegan mayo
2 tsp. lemon juice
1 Tbsp. diced red onion
Pink Salt & pepper to taste
3 Slices of toast (we used sprouted grain)
1 tomato sliced,
1 Cup dairy-free cheese of choice
Fresh chives for garnish
1) Let the Mind Blown plain shrimp thaw in the fridge overnight. Pulse in a blender or food processor until completely chopped and has a shredded texture consistency.
2) Add the shredded shrimp to a mixing bowl with the vegan yogurt, vegan mayo, lemon juice, onion, pink salt and pepper and mix to combine.
3) Toast your slices of toasts first (to get them crispy), then top with the Mind Blown Shrimp Salad mixture, some cheese, slice of tomato, and more dairy free cheese on top. Repeat for all slices of toast.
4) Place slices on a baking sheet and broil for 2-3 minutes until cheese is golden brown and bubbly. Finish with chives and lemon wedge. Enjoy!
