INGREDIENTS:
1 C of Mind Blown Dusted Shrimp, cooked
2 Tbsp. vegan plain yogurt
1 Tbsp. vegan mayo
2 tsp. lemon juice
1 Tbsp. diced red onion
Pink Salt & pepper to taste
3 Slices of toast (we used sprouted grain)
1 tomato sliced,
1 Cup plant-based cheese of choice
Fresh chives for garnish
DIRECTIONS:
1)Prepare the Mind Blown Dusted Shrimp; set aside to cool.
*Air Fryer instructions: Spray the air fryer basket with high-heat oil spray. Add Mind Blown Dusted Shrimp. Turn air fryer on at 360 degrees for 12 minutes.
*Stove-top instructions: Heat high-heat oil in a cast-iron skillet and cook Mind Blown Dusted Shrimp for a about a minute on both sides until golden brown.
2) Place the prepared Mind Blown Dusted Shrimp on a cutting board and rough-chop them until desired consistency. You can also pulse in a blender or food processor until completely chopped.
3) Add the chopped plant-based shrimp to a mixing bowl with the vegan yogurt, vegan mayo, lemon juice, onion, pink salt and pepper and mix to combine.
4) Toast your slices of toasts first (to get them crispy), then top with the Mind Blown Shrimp Salad mixture, some shredded plant-based cheese of choice, slice of tomato, and more cheese on top. Repeat for all slices of toast.
5) Place toast slices on a baking sheet and broil for 2-3 minutes until cheese is golden brown and bubbly. Finish with chives and lemon wedge. Enjoy!
